It's a mouthful alright - and we didn't even list all of the ingredients!   Here’s a perfect quick side dish everyone will love, and it's a healthy alternative to heavy beans or pasta salads.  Our Golden Masala Balsamic and Smoked Olive Oil make it unique. Black-Eyed Pea and Beet Salad

We love black-eyed peas on New Year's Day.  This recipe is one way to lighten the New Year's meal.  Even better - enjoy this recipe all year round.  If red Belgian endive can't be found, frisee makes a great alternative. INGREDIENTS 1 cup dried black-eyed peas, rinsed and picked over 3 large garlic cloves, 2 of them crushed and left in the skin, 1 of them minced 1 onion cut in half 1 bay leaf Salt to taste 1 medium fennel bulb (about 1/2 pound), trimmed, quartered, cored and sliced very thin across the grain 1 tablespoon fresh lemon juice 1/3 cup Lambrusco Red Wine Vinegar 1/3 cup Picual extra virgin olive oil 1 teaspoon dried tarragon Freshly ground black pepper to taste ⅓...

Black Bean and Corn Salad

It’s so quick and simple you can make it in minutes - great for a mid week dinner side dish.  Stock your pantry with organic canned products and you'll have this done in 10 minutes. Ingredients 1 can each - Kidney beans Black Beans Corn Hominy 2 T fresh chopped dill 2 T fresh chopped mint 2 T fresh chopped Italian parsley 2T  lemon juice and zest 2T Pasadena Blend Extra Virgin Olive Oil 2T your favorite Balsamic Vinegar salt and pepper to taste Pour the contents of the cans into a colander and then once drained, blend them in a large bowl.  Finely chop all the herbs and then dress with the olive oil, lemon and balsamic.
