Olive Oil Cocktail made with watermelonAdd a unique sensation - viscosity - to your summer drinks.  Here's how!

The trick to getting this cocktail right is to have a blender with a single serve attachment.

What you'll need -

1 pony (3/4 oz) Arroyo Seco Extra Virgin Olive Oil (a medium robust oil) or if you are adventurous use our Basil Olive Oil or Orange Olive Oil

1 jigger (1 1/2 oz) Vodka or Moonshine (clear)

1 1/4 cup cut up FROZEN watermelon (should be in 1 to 2 inch chunks)

1 egg white

Balsamic Vinegar for drizzling/decor

Fresh clean raspberries for embellishment

Olive Oil Cocktails for summer

Ahead of time note:  Watermelon season is here and there isn't an easier fruit to freeze and use as needed.  Cut watermelon into 1 to 2 inch pieces and freeze a day ahead. We keep it on hand for smoothies too.

Blend the olive oil and the vodka together in the blender for 30 seconds.  Add the egg white and blend until there is no separation (another 30 seconds).  Then add the watermelon and blend until smooth.

Pour into one or two glasses.

Drizzle in a circle with your favorite dark balsamic.  Add a raspberry and serve!

Refreshing and contains a lot of good stuff!  This isn't a super sweet drink.

If you need it sweeter we suggest using White Balsamic or simple syrup to taste.
