Truth be told - I was aghast when I saw the black liquid pouring out of the shaker... Curiosity prevailed, so I had a sip... and suddenly, I looked at this drink with newfound fondness.
Figs and limes and mezcal and a spritz of soda water. Give it a try now, practice, perfect it, and you'll agree it's the perfect Halloween party drink... and then you'll thank me for the idea that Halloween isn't just for children. Besides, you need an excuse for a party.
Of course if you are reading this after Halloween, take heart - Cinco de Mayo is just around the corner!
Ingredients
Ginger Syrup
- 1/2 cup granulated sugar
- 1/2 cup water
- 3 tbsp fresh ginger peeled and chopped
Fig Margaritas
- 1 jigger (1 1/2 ounce) Beyond The Olive Fig Balsamic Vinegar
- 1 jigger mezcal
- 1 pony (3/4 ounce) Ginger Syrup
- juice of 1 lime
- ice
- soda water or mineral water
Garnishes
- Lime Fusion sea salt
- lime wedges
- orange wedges
Instructions
Make Ginger Syrup:

Combine all the ingredients in a small saucepan. Bring to a simmer and stir to dissolve the sugar for 5 minutes. Remove from heat and steep until cool. Strain out the ginger.

Can be stored up to 2 months in a tightly-sealed container in the refrigerator.
Make Fig Margaritas:

Rub a lime or orange wedge around the rim of the glass and then dip the rim in Lime Fusion Sea Salt.

Fill glass with ice.

Fill a cocktail shaker with ice. Add Fig Balsamic, Mezcal, Ginger Syrup, and lime juice. Shake vigorously.

Strain into prepared glass. Top with a splash of soda water. Garnish with a an orange wedge and a lime wedge.
